Easy ratatouilleTo serve 4 people

Take a selection of summery Mediterranean veggies to suit your taste – think courgettes, aubergines, red and yellow peppers, and chop them into rough cubes.

Also roughly chop an onion, and a few large, juicy tomatoes (or open a can of pre-chopped), and crush a garlic clove.

Heat a tablespoon of rapeseed oil in a pan, and add the onion. Sweat for several minutes over a medium heat until translucent, but do not let it brown. Add the crushed garlic and fry for a further minute.

Stir in the summer veggies, and cook for a further five minutes. Then add the tomatoes and a teaspoon of dried mixed herbs.

Lower the heat and cover the pan, and simmer gently for 30 minutes, adding a slosh of hot water if it becomes too dry.

To serve, garnish with a handful of torn fresh basil leaves.
